This healthy makeover of a popular seven-layer salad tops a fresh and colorful combination of lettuce, peas, bell pepper and tomatoes with a creamy, tangy dressing. To start, place 8 cups shredded romaine lettuce in a large bowl. On top of the lettuce, layer 1 cup thawed frozen peas, 1 diced medium yellow bell pepper, 1 cup halved grape tomatoes or quartered cherry tomatoes, 1 cup sliced celery and 1/2 cup sliced scallions. Then, in a medium bowl, combine 3/4 cup nonfat plain yogurt, 3/4 cup low-fat mayonnaise, 2 teaspoons cider vinegar, 1 teaspoon sugar and 1/4 teaspoon each of garlic powder, salt and pepper. Whisk until smooth. Taste and adjust seasonings, adding up to 1 more teaspoon sugar, if desired. Spread the dressing evenly over the top of the salad. Sprinkle with 1/2 cup of shredded reduced-fat Cheddar cheese, 1/2 cup of thinly sliced fresh basil and 3 strips of cooked and crumbled bacon. Serve at room temperature or chilled.
