These healthy, slow-cooker baked beans are a perfect side dish for barbecues, parties or a weeknight dinner. They have 50 percent fewer calories, a fraction of the saturated fat and half the sugar of a traditional recipe.

These healthy Slow-Cooker Baked Beans are a perfect side dish for barbecues, parties or a weeknight dinner. Start by sorting through 1 pound dry navy beans or great northern beans to remove any pebbles. Rinse well with cold water. Soak the beans overnight by placing them in a large bowl, covered with 3 inches of cold water, and leaving them at room temperature for 8 to 24 hours. When you're ready to prepare the baked beans, add 1 diced onion and 4 slices of cut bacon into a large skillet over medium-high heat. Cook until the onion is starting to brown, reduce heat to medium-low and continue cooking until the onion is very soft, about 5 more minutes. Stir in 3 tablespoons bourbon and cook for 1 minute, stirring and scraping up the brown bits from the bottom of the pan; set aside. Drain and rinse the soaked beans. Transfer to a 5- to 6-quart slow cooker. Stir in 3 cups low-sodium chicken broth, 1/2 cup ketchup, 1/4 cup maple syrup, 2 tablespoons molasses, 1 teaspoon dry mustard and 1/4 teaspoon ground chipotle pepper. Spoon the onion-bacon mixture on top of the bean mixture, but don't stir the two together. Cover and cook on High for six hours or Low for eight hours.
