This recipe for traditionally rich ham and cheese breakfast strata is made lighter by using egg whites, spinach, whole-grain bread and nonfat milk. First, whisk 4 whole eggs, 4 egg whites and 1 cup nonfat milk in a medium bowl. Then, add 2 tablespoons Dijon mustard, 1 teaspoon minced fresh rosemary and 1/4 teaspoon freshly ground pepper and whisk to combine. Place 5 cups rinsed, chopped spinach in a large microwave-safe bowl. Cover with plastic wrap and punch several holes in it. Microwave on High until wilted, about 2 to 3 minutes. Squeeze out any excess water. Place the spinach in a large bowl and add 4 cups cubed whole-grain bread, 1 cup diced ham steak and 1/2 cup chopped roasted red peppers. Add the egg mixture and toss well to coat. Then, transfer to a 7-by-11-inch ceramic baking dish coated with cooking spray. Bake at 375˚F until the custard is set, about 40 to 45 minutes. Uncover and sprinkle with 3/4 cup shredded Gruyère or Swiss cheese. Continue baking until it's puffed and golden on top, about 15 to 20 minutes.
