These Blueberry-Maple Muffins made healthier with flaxseed are delicious any time of the day. First, grind 1/3 cup flaxseeds in a spice mill. Transfer the flaxseeds to a large bowl and add 1 cup whole-wheat flour, 3/4 cup plus 2 tablespoons all-purpose flour, 1-1/2 teaspoons baking powder , 1 teaspoon cinnamon, 1/2 teaspoon baking soda and 1/4 teaspoon salt. Whisk to blend. In a separate medium bowl , whisk 2 eggs and 1/2 cup maple syrup until smooth. Add 1 cup buttermilk, 1/4 cup oil, 2 teaspoons orange zest, 1 tablespoon orange juice and 1 teaspoon vanilla and whisk until blended. Stir the wet ingredients just[AT1]  until moistened. Carefully fold in 1-1/2 cups blueberries, then scoop the batter into the muffin cups, sprayed with cooking spray. Sprinkle the tops with 1 tablespoon sugar.
