If you love fried rice, you'll want to try this healthier Farmers' Market Fried Rice, packed with fresh veggies and only half the calories and sodium of typical takeout. Remember to cook the brown rice ahead of time. Heat your wok until it's very hot. A bead of water should vaporize within 1 to 2 seconds. Swirl in 2 teaspoons oil, coating the bottom of the wok completely. Add 2 beaten eggs, and tilt your wok so the eggs spread and make a pancake. When it's just set, flip it and let it set just 5 seconds more, then put it on the cutting board and cut it up into bite-size pieces. Back in the wok, swirl 1 tablespoon of oil and cook 1/2 cup thinly sliced shallots and 2 tablespoons minced garlic just a few seconds until they're fragrant. Now reduce the heat to medium-high and stir-fry 4 sliced Brussels sprouts and 1 cup diced parsnips until they're nearly cooked through. Add 1 more tablespoon of oil and then 4 cups cold cooked brown rice, 12 halved cherry tomatoes and 2 tablespoons reduced-sodium soy sauce. Stir-fry, breaking up the rice, until it's heated through. Then sprinkle in 1/4 cup finely chopped fresh cilantro, 1/4 teaspoon salt and 1/4 teaspoon white pepper. Add the egg pieces and toss to combine.
