Salmon cakes are a tasty way to use cooked leftover salmon or canned salmon and get heart-healthy omega-3 fats in your diet. First, preheat the oven to 450˚F and coat a baking sheet with cooking spray. Then sauté 1 chopped small onion and 1 diced stalk celery in 1-1/2 teaspoons olive oil until softened, and stir in 2 tablespoons parsley. Put 15 ounces drained canned salmon or 1-1/2 cups leftover cooked salmon in a bowl and flake it with a fork. Mix in 1 beaten egg and 1-1/2 teaspoons Dijon mustard. Mix well and add the onion mixture, 1-3/4 cups breadcrumbs and 1/2 teaspoon pepper. Then form 8 patties, flattening them out so they're 2-1/2 inches wide. Use 1-1/2 teaspoons of olive oil to cook the salmon cakes until they're golden on both sides, then put them on the baking sheet and finish them in the oven for 15 to 20 minutes.
