First, preheat the oven to 450 and coat a baking sheet with cooking spray then saute 1 chopped small onion and 1 diced stalk celery in 1-1/2 teaspoon olive oil until softened and stir in 2 tablespoons parsley. Put 15 ounces drained can salmon or 1-1/2 cups leftover cooked salmon in a bowl and flake it with a fork. Mix in 1 beaten egg and 1-1/2 teaspoons Dijon mustard. Mix well and add the onion mixture, 1-3/4 cup bread crumbs, and 1/2 teaspoon pepper then form 8 patties, flattening them out so they're 2-1/2 inches wide. Use 1-1/2 teaspoons of olive oil to cook the salmon cakes until they're golden on both sides then put them on the baking sheet and finish them in the oven for 15 to 20 minutes.
