Creamy Asparagus Pasta is a delicious lighter take on pasta primavera, usually made with heavy cream and tons of cheese. With smart swaps and smaller portions, you'll cut nearly half the calories. Start by boiling 8 ounces whole-wheat penne. While the pasta's cooking, start the sauce. Whisk 1-1/2 cups milk with 4 teaspoons whole-grain mustard, 4 teaspoons flour, 1/2 teaspoon salt and 1/2 teaspoon pepper. Using 2 teaspoons oil, quickly sauté 3 tablespoons minced garlic, then add in the milk mixture. Keep whisking until it thickens, 1 to 2 minutes. Then stir in these great flavorings: 2 teaspoons lemon juice, 1 teaspoon lemon zest and 2 teaspoons tarragon. Cook the pasta about 3 minutes less than the package says, then add 1 bunch asparagus, cut into 3/4-inch pieces, while the pasta finishes cooking. Drain the pasta and asparagus and return to the pot. Stir in the sauce and cook over medium-high heat until the sauce thickens. Stir in 1/4 cup of Parmesan. Divide among 4 bowls and sprinkle on another 1/4 cup Parmesan.
