Almond Butter-Quinoa Blondies are healthier than traditional brownies or blondies, and they're gluten-free. Prepare the pan by spraying and lining the bottom with parchment paper. Beat 1/4 cup butter and 3/4 cup almond butter until creamy, then beat in 3/4 cup light brown sugar, 2 eggs and 1 teaspoon vanilla. Whisk 3/4 cup quinoa flour with 1 teaspoon baking powder and 1/4 teaspoon salt, then mix that into the wet ingredients. Stir in 1 cup chocolate chips. Spread the mixture in the pan.
