These family-friendly chicken nuggets are ready in just 20 minutes, and they're healthier than frozen or fast-food nuggets. First, mash 1 cup berries with 1-1/2 tablespoons mustard and 2 teaspoons honey to make a chunky sauce. Set that aside, then use 1 pound precut chicken tenders and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Then, toss in 3 tablespoons cornmeal to coat. Use 1 tablespoon of olive oil, which has heart-healthy monounsaturated fats. In a nonstick skillet, cook the nuggets 6 to 8 minutes, turning them to get them evenly browned, crispy and delicious.
