Here's a homemade version of boxed hamburger helper that's just as quick and convenient. Plus, it's healthy and delicious. We call it Hamburger Buddy. First, use a food processor to chop 3 cloves garlic, 2 carrots, 10 ounces mushrooms and 1 onion. These veggies add fiber and nutrients that you wouldn't get with helper from a box. Now, brown the beef—using 1 pound 90%-lean ground beef—then add the chopped veggies along with 2 teaspoons thyme, 3/4 teaspoon salt and 1/4 teaspoon pepper and cook until the vegetables are softened. Add 2 cups water, 1-1/2 cups reduced-sodium beef broth and 2 tablespoons Worcestershire sauce, and cook 8 ounces whole-wheat elbow noodles right in the same pot. Stir in a slurry of 2 tablespoons flour and 1/2 cup broth and simmer for a couple minutes to thicken the sauce. Then stir in 1/2 cup reduced-fat sour cream, and your Hamburger Buddy is ready.
