If you're eating gluten-free, you can enjoy this delicious breakfast of Maple-Nut Granola, which is perfect over low-fat yogurt or with milk. Combine 5 cups oats with 1 cup unsweetened coconut chips or flakes; 1/2 cup each almonds, pecans and brown sugar; and 1/3 cup each pumpkin seeds and sunflower seeds. In a bowl, combine 1/2 cup maple syrup, 1/2 cup water, and 1/4 cup canola oil. Pour that over the oat mixture and stir until well combined. Spread the mixture in a large roasting pan or rimmed baking sheet. Bake the granola for an hour and a half[AT1] , stirring once after 45 minutes.
