Start by sautéing a 16-ounce package gnocchi in 1 tablespoon olive oil until they plump up and start to brown, then transfer to a bowl. Add 1 teaspoon oil to the pan and cook 1 sliced onion for a couple of minutes. Then stir in 4 minced cloves of garlic and 1/2 cup water. Cover that and cook until the onion is softened. Now stir in 6 cups chopped chard. Stir the chard until it's starting to wilt. When the chard is wilted, stir in a can of diced tomatoes with Italian seasoning and a can of white beans, rinsed to remove extra salt. Season with pepper and bring that to a simmer. Add the gnocchi back in and sprinkle with 1/2 cup shredded part-skim mozzarella and 1/4 cup of Parmesan. Cover and cook until the cheese is melted and the sauce is bubbling. Then it's ready to eat.
