Need a creative idea for zucchini? Try this cheesy Zucchini Rice Casserole. Start with 1-1/2 cups long-grain brown rice, a whole grain that makes this hearty casserole even more satisfying. Stir 3 cups hot reduced-sodium chicken broth into the rice along with 4 cups diced zucchini, 2 chopped bell peppers, 1 diced large onion and 3/4 teaspoon salt, then cover with foil and bake 45 minutes at 375˚F. Uncover and continue baking until the rice is tender. While that's baking, whisk up a cheese sauce. Start by whisking 1-1/2 cups low-fat milk with 3 tablespoons all-purpose flour. Cook until bubbling and thickened, then add 1-1/2 cups shredded pepper Jack cheese and 1 cup corn. Heat 2 teaspoons olive oil and brown 8 ounces turkey sausage, which reduces the amount of saturated fat you would get from pork sausage. When the rice is done, stir in the sausage and cheese sauce. Sprinkle with another 1/2 cup Jack cheese and sprinkle with 1/4 cup pickled jalapeños. Top with dollops of 4 ounces reduced-fat cream cheese. Bake until that's melted.
