Stir 3 cups hot reduced-sodium chicken broth into the rice along with 4 cups diced zucchini, 2 chopped bell peppers, 1 diced large onion and 3/4 teaspoon salt, then cover with foil and bake 45 minutes at 375˚F. Uncover and continue baking until the rice is tender. While that's baking, whisk up a cheese sauce. Start by whisking 1-1/2 cups low-fat milk with 3 tablespoons all-purpose flour. Cook until bubbling and thickened, then add 1-1/2 cups shredded pepper Jack cheese and 1 cup corn. Heat 2 teaspoons olive oil and brown 8 ounces turkey sausage, which reduces the amount of saturated fat you would get from pork sausage. When the rice is done, stir in the sausage and cheese sauce.
