Warm quinoa salad with edamame and tarragon is the perfect way to enjoy healthy, quick-cooking quinoa. To start, toss 1 cup quinoa in a dry skillet over medium heat until it begins to crackle. This enhances its flavor. Transfer to a fine sieve and rinse thoroughly. While the quinoa is toasting, bring 2 cups vegetable broth to a boil. Add the quinoa, return to a boil and cover. Simmer for 8 minutes. Remove the lid and, without disturbing the quinoa, add 2 cups edamame. Cover and continue to cook until the edamame and quinoa are tender, 7 to 8 minutes longer. While the quinoa and edamame are cooking, whisk 1 tablespoon lemon zest, 2 tablespoons lemon juice, 2 tablespoons extra-virgin olive oil, 2 tablespoons chopped tarragon, and 1/2 teaspoon salt in a large bowl.
