Cruciferous vegetables contain compounds that may help prevent cancer. Start by tossing 8 cups of cut cauliflower florets in a large bowl with 2 tablespoons oil, 1 teaspoon marjoram, 1/4 teaspoon salt and pepper to taste. Spread on a large rimmed baking sheet and roast at 450°F until the cauliflower starts to soften and turn brown on the bottom, 15 to 20 minutes.
