This muffin-tin recipe for mini healthy quiches is quick and a good trick for portion control. These mini muffin-tin crustless quiches are gluten-free and use turkey sausage instead of pork for less saturated fat. This easy quiche recipe is a healthy breakfast idea or appetizer.

Instead of making muffins in your muffin tin, make healthy, gluten-free crustless mini quiches. Generously coat a nonstick muffin tin with cooking spray. First, cook 8 ounces turkey sausage, which is lower in saturated fat and calories than pork sausage. Then, add 1 teaspoon oil to the pan, and cook 8 ounces sliced mushrooms until golden brown. Transfer to the bowl with the sausage. Let cool for 5 minutes, then stir in 1/4 cup sliced scallions, 1/4 cup shredded Swiss cheese and 1 teaspoon pepper. To reduce the saturated fat but keep the protein content high, combine 5 eggs, 3 egg whites, and 1 cup low-fat milk. Divide the egg mixture evenly among the prepared muffin cups, then sprinkle a heaping teaspoon of the sausage mixture into each cup.
