Instead of making muffins in your muffin tin, make healthy, gluten-free crustless mini quiches. Generously coat a non-stick muffin tin with cooking spray. First, cook 8 ounces turkey sausage, which is lower in saturated fat and calories than pork sausage. Then, add one teaspoon oil to the pan, and cook 8 ounces sliced mushrooms until golden brown. Transfer to the bowl with the sausage. Let cool for five minutes, then stir in 1/4 cup sliced scallions, 1/4 cup shredded Swish cheese, and 1 teaspoon pepper. To reduce the saturated fat but keep the protein content high, combine five eggs, three egg whites, and one cup of low-fat milk. Divide the egg mixture evenly among the prepared muffin cups, then sprinkle a heaping teaspoon of the sausage mixture into each cup.
