How to Make a Cake Healthy

I'm going to show you how to make the perfect Yellow Sheet Cake for a birthday, holiday or any celebration. Plus, I'm going to show you a few simple tricks to make it healthier. First, beat granulated sugar, oil and butter in a large mixing bowl with an electric mixer until that's combined. Add in your eggs one at a time, keep on blending until those are incorporated. Now, instead of using all butter, we're using vegetable oil to reduce the amount of saturated fat in this cake. All right, separate bowl: I'm going to combine all my dry ingredients here. So I have whole-wheat pastry flour, cake flour, baking soda and salt. We like to use whole-wheat pastry flour instead of white all-purpose flour to add fiber, and we use the cake flour because it helps keep the cake tender. In a measuring cup, I'm going to combine buttermilk, lemon zest , lemon juice, vanilla and almond extract. Now, with the mixer on low speed, I'm going to add the dry ingredients to the mixing bowl, alternating with the buttermilk mixture a little bit at a time. So dry ingredients, buttermilk mixture, beat. Keep on doing that until the ingredients are incorporated in order to keep that cake light and fluffy. Then I'll spread the batter into a prepared pan and bake it at 350 degrees for 28 to 34 minutes, until a toothpick inserted in the center comes out clean. All right, while your cake is in the oven, we're going to make Cream Cheese Frosting . Now, I have reduced-fat cream cheese here. I'm adding in confectioners' sugar, yogurt and vanilla, and beat that all together until it's smooth. By using reduced-fat cream cheese and Greek yogurt instead of butter, we cut the calories and fat to a quarter of what you get from traditional cream cheese frosting . After the cake is out and it's cooled, you spread the frosting over the sides and the top. Using raspberries and blueberries, I'm going to make flowers over the top of the cake, pretty arrangement. Then, I'm going to place strawberry slices all around the edges of the cake, with the pointed ends up. Now, by making our healthier yellow cake and cream cheese frosting, and eating just a little bit of a smaller portion, you save more than 100 calories and 10 grams of fat.
