Easy Appetizers: 4 Quick Appetizers for a Party

EatingWell's Jessie Price shows how to make four easy appetizers for a party: Ham and Red Pepper Spread. Marinated Olives, Shrimp Poppers and Polenta Rounds. These quick appetizer recipes are perfect when you need to bring a healthy appetizer for a party.

Hi, this is Jessie. I'm here in the EatingWell Test Kitchen, and I'm going to show you how to make four practically instant appetizers. Bring any of these along and you're going to impress your friends and you're going to have something healthy to eat. First up, Shrimp-Pepper Poppers. These are melba toasts. Spread them with a little bit of reduced-fat cream cheese, top it with a store-bought already-cooked shrimp, put a little bit of pepper jelly right on there. That's it. Pretty. Next, we have polenta wedges with a little sun-dried tomato tapenade. So I take tubed polenta, slice that into 12 slices, spray it with a little cooking spray, and then I bake it in the oven until it's golden on both sides. Bring it out and cut it into little triangles. Next, you make your homemade tapenade. Take sun-dried tomatoes, olive oil, garlic, capers, parsley and a little pepper. Blend that up in your food processor until you've got a nice tapenade. Put a little bit on top of each of your polenta wedges. That's it. This is Ham & Red Pepper Spread. It's a little smoky. It's delicious. So you take cubed ham, jarred roasted red peppers, a little bit of smoked paprika and sherry vinegar. Pulse that in your food processor until it's nice and finely chopped. Bring it out, put it in a bowl and then mix it together with a little bit of reduced-fat cream cheese and some chopped fresh parsley. Serve that up on crackers or on little endive leaves. Put it out on a tray. It's beautiful. This is the simplest of them all, marinated olives. This is just dressing them up to make them a little fancier. Take a whole bunch of store-bought mixed olives. Mix them up with lemon juice, lemon zest, a little olive oil, sliced garlic, thyme, some rosemary sprigs and some pepper. Let that sit in your refrigerator for a day or two. They taste amazing, and they are gorgeous when you put them out for a party. That's it. Four practically instant appetizers that are delicious and healthy too.
