I'm going to show you how to make a practically instant appetizer. It is Polenta Wedges with Tomato Tapenade. So I take tubed polenta, I slice that into 12 slices, spray it with a little cooking spray and then I bake it in the oven until it's golden on both sides. Bring it out and cut it into little triangles. Next you make your homemade tapenade. Take sun-dried tomatoes, olive oil, garlic, capers, parsley, a little pepper. Blend that up in your food processor until you've got a nice tapenade. Put a little bit on top of each of your polenta wedges. That's it.
