Hi, this is Jessie. I'm here in the EatingWell Test Kitchen, and I'm going to show you how to make three super-quick 100-calorie snacks. First up, Lemon-Parm Popcorn. So I have air-popped popcorn. I combine a little bit of olive oil with lemon pepper and a pinch of salt, drizzle that over my popcorn. Toss it around. Then sprinkle that with Parmesan cheese and that's it. Delicious. Next, we're going to do Kale Chips. So I have clean, already-dried-off kale. I drizzle that with olive oil and a little salt. Massage that in. Then I spread that on two baking sheets. Take care that it doesn't overlap too much. Put that into your oven. Bake it for 8 to 12 minutes, until it's nice and crispy. Pull it out. You've got Kale Chips. And finally, Pimiento Cheese. So this is a Southern favorite. I'm going to show you how to make it a little healthier. So I have reduced-fat Cheddar cheese that's already shredded here. And I'm using that instead of regular Cheddar, and then I'm mixing in a little bit of low-fat mayo instead of regular mayo, pimientos, chopped-up scallions and then a couple of dashes of hot sauce. Stir that all together and then put it on top of some whole-grain crackers. And that's it. It's delicious. Couldn't be any easier. Three quick snacks, each less than 100 calories.
