Jessie’s here in the EatingWell Test Kitchen to show you how to make EatingWell’s Pimiento Cheese Spread. “Pimiento cheese is a Southern favorite,” explains Jessie. “And I'm going to show you how to make the popular appetizer a little healthier.”

EatingWell’s Pimiento Cheese1. Start with pre-shredded reduced-fat Cheddar cheese and low-fat mayonnaise. Using reduced-fat Cheddar cheese instead of regular Cheddar cheese, and a little bit of low-fat mayo instead of regular mayo, slashes the saturated fat that you’d find in a regular pimiento cheese spread recipe.

2. Season the pimiento cheese spread with pimientos, chopped scallions and a couple of dashes of hot sauce. “Stir that all together and then put the pimiento cheese spread on top of some whole-grain crackers,” she says. “Or put it on a sandwich. That's it. It's delicious.”
