How to Make an Easy Breakfast Yogurt Parfait Video

Watch them make a Breakfast Parfait with yogurt and get tips on eating a better breakfast.
Jessie and Nicci are in the EatingWell Test Kitchen to show you how easy and quick it is to make a better breakfast. Research suggests that people who eat breakfast every day have more nutrient-rich diets than breakfast skippers. “It makes sense when you think about it,” says Nicci, “because a lot of popular breakfast foods are just really packed with nutrients.”
One example of a nutritious breakfast is a bowl of cereal. “You've got whole-grain flakes topped with blueberries,” explains Nicci. “So you're getting lots of fiber and antioxidants. And then you top this off with nonfat milk and you're getting protein and calcium too.”
“Here's another way to do it,” says Jessie. “This EatingWell Breakfast Parfait.” To make the parfait, start with a little low-fat yogurt—or, if you prefer, low-fat cottage cheese—just a quarter cup. Top it with some fruit, such as papaya or pineapple, peaches, or another fruit that’s in season. Thawed frozen berries work well also. Finish off the parfait a little bit of wheat germ for a nutty flavor and even more nutrients (wheat germ is a great source of Vitamin E and fiber). Round out this healthy breakfast with a slice of whole-grain toast.
