How to Make 3 Healthy Low-Calorie Snacks Video



Searching for quick, healthy diet-friendly snacks? Find out how to make an easy 100-calorie snack in just minutes! EatingWell’s food editor, Jessie Price, shows you how easy it is to make three healthy low-calorie snacks.

Did you know popcorn can be a great healthy snack? Because it’s a whole grain, its fiber and nutrients make it a good choice. Plus, if you use an air popper and avoid butter, it can be calorie-smart as well. Our first recipe is Lemon-Parm Popcorn. Jessie starts with air-popped popcorn. To make it flavorful without butter or too much salt, she combines a small amount of olive oil with lemon pepper and just a pinch of salt and drizzles that over the popcorn. “Toss that around,” says Jessie. “Then sprinkle it with Parmesan cheese and that's it. Delicious!”

Next, Jessie shows you how to make Kale Chips. She simply drizzles fresh kale with olive oil and sprinkles on a little salt. “Massage that in,” Jessie says. “Then spread that on two baking sheets, taking care that it doesn't overlap too much.” The kale bakes for 8 to 12 minutes, until it's nice and crispy. “Pull it out of the oven and you've got Kale Chips!”

The third low-calorie snack is Pimiento Cheese. “So this is a Southern favorite,” explains Jessie. “And I'm going to show you how to make it a little healthier.” She starts with pre-shredded reduced-fat Cheddar cheese. Using reduced-fat instead of regular Cheddar, and a little bit of low-fat mayo instead of regular mayo, slashes the saturated fat that you’d find in a regular recipe for this yummy spread.

Jessie finishes up by seasoning the cheese mixture with pimientos, chopped scallions and a couple of dashes of hot sauce. “Stir that all together and then put it on top of some whole-grain crackers,” she says. “And that's it. It's delicious.”
