My Town and State: South Burlington, VT
Brierley's interest in nutrition and food come together in her position as nutrition editor at EatingWell. Brierley holds a master’s degree in Nutrition Communication from the Friedman School of Nutrition Science and Policy at Tufts University. A Registered Dietitian, she completed her undergraduate degree at the University of Vermont.
Just as the seasons change, so do my favorite EatingWell recipes. My latest obsessions are the Sweet Potato-Peanut Bisque from last year and the Quick Chicken Tikka Masala from earlier this fall. But my tried-and-true fav’s that people always ask for the recipe are Hamburger Buddy, Peach & Blueberry Cobbler and Frozen Pumpkin Mousse Pie.
Everything in moderation!
Heart Health (including High Blood Pressure and Cholesterol)
I want to be—and stay—healthy so that I can enjoy life and live it to the fullest. I want to be healthy enough to go for a run, hike with my dog, ski in the winter, sweat it out through 90 minutes of yoga or one day decide to randomly try something new and challenging like mountain biking or rock climbing.
Running, hiking, yoga, snowshoeing, skiing.
one day I want to be a whiz at homemade pasta and bread that’s not quick-bread.
Making healthy taste good for those in my life that think healthy means bland, boring food.
