Save organic citrus juice and zests. Organic oranges, lemons and limes are sometimes hard to find in supermarkets, even in their peak winter months. So when you find them, pounce! Buy more than you need and preserve their zest and juice in the freezer: Carefully pare off the zest, being sure not to capture the bitter white pith underneath; squeeze out the juice and freeze in ice cube trays; transfer to a zip-close bag and store for up to 3 months. Save the zest strips in a zip-close freezer bag, squeezing out air; they'll keep for at least 3 months, ready to use, unthawed, as needed. However, freezing will diminish the zest's flavor slightly, so just double the amount called for in your recipe.
