It turns out our tongues may actually be able to detect calcium in foods, according to research presented at the annual National Meeting of the American Chemical Society in Philadelphia last August.</p> <p>Taste buds have receptors for at least five known specific tastes—salty, sweet, bitter, sour and savory (or umami). Researchers pinpointed two of these taste receptors—sweet and umami—as being involved in tasting a sixth, calcium. What’s surprising is that calcium doesn’t taste sweet or savory. “It is bitter, sometimes sour,” says lead study author Michael Tordoff, Ph.D., a biologist at the Monell Chemical Senses Center in Philadelphia.</p> <p>But the usefulness of the findings goes beyond taste. Ultimately researchers are trying to help Americans meet recommended intakes for calcium. “We know from studies that animals with increased needs for calcium find the mineral more palatable,” explains Tordoff, “for example, pregnant and lactating mammals and birds laying eggs.” But humans tend to dislike the taste of calcium, which is found naturally in dairy products (the fat and protein in these foods bind to the calcium, which is why they’re not so bitter) and dark leafy greens, such as broccoli and spinach. Says lead author Naomi Allen, Ph.D., “There is mounting evidence that even drinking alcohol in moderation can increase estrogen, which in turn directly raises the risk of breast cancer.”</p> <p>Glass Half Full: Cheers to stronger bones! According to a new study out of Tufts University, drinking alcohol in moderation might help keep bones strong—in men and postmenopausal women, who have lower levels of estrogen (which helps to maintain bone mass). The study found a stronger association between bone density and drinking beer and wine, compared to liquor, indicating that it’s more than just alcohol that boosts bone health. Beer and wine contain silicon, a mineral that promotes bone formation. Wine also contains polyphenols that may stimulate bone-building, explains lead study author Katherine L. Tucker, Ph.D.</p> <p>Bottom Line: Alcohol, in moderation, can be part of a healthy lifestyle, Tucker says. A member of the mint family that is abundant in Mexico and South America, chia was highly prized by the Aztecs, who believed it provided supernatural powers. Today, it’s being touted for having cardiovascular benefits, reducing blood sugar levels and perhaps even squelching hunger pangs.</p> <p><strong>Pros:</strong> In a 2007 Diabetes Care study of 20 people with type 2 diabetes, those who added about 4 tablespoons of Salba—a specific Salvia hispanica strain that’s been cultivated for its nutritional consistency—to their diets for 12 weeks saw improvements in blood pressure and reduced inflammation, a recognized risk for heart disease. In April, the study’s authors (scientists from the University of Toronto) reported at an annual Experimental Biology meeting that healthy people who ate a slice of white bread containing as little as three-quarters of a tablespoon of Salba saw a drop in blood sugar levels and reported feeling fuller than after they ate plain white bread.</p> <p><strong>Cons:</strong> Chia seeds can vary widely in their nutritional makeup, and Salba is the only cultivar for which clinical trials suggest health benefits. (Even for Salba, the published peer-reviewed science currently is limited to one small preliminary study.) Although high in fiber, chia seeds are also high in calories (about 37 calories and 3 grams fiber per tablespoon).</p> <p><strong>Bottom line:</strong> “The average American already gets a good amount of omega-3 fatty acids from the two major vegetable oils used in the U.S., soybean and canola oils,” says Alice Lichtenstein, D.Sc., director of the Cardiovascular Nutrition Laboratory at Tufts University and an EatingWell Nutrition Advisory Board member. “There are no data to indicate supplemental vegetable sources of omega-3 fatty acids will provide additional health benefits.” That said, eating chia seeds (the kind sold as food!) won’t harm you. So if it’s nutty crunch you crave, try them.
