"The Meatless Monday movement is growing in popularity across the country." ????
I find that really hard to believe. This is based on what evidence? I can imagine how outraged vegans would be if there was "Non Vegan Tuesdays". I like to eat meatless meals now and then, but to try to alter other peoples decisions is not my place or anyone else's for that matter. Why can't people live and let live. Eat what you want when you want it, and leave others alone. Stop trying to push an agenda.

I will agree that there is an agenda here. However, if you're reading these recipes you probably have an interest in eating healthier and perhaps think that going vegetarian might help the rest of the world in some way. I think suggesting that Monday could be meatless is just a way for those interested to take a step in meeting their goals.

This recipe looks lovely! I'm sooooo not a vegetarian but have found my inner bean-eater in the last year or so and then putting carmelized onion with it! y.u.m.

Perhaps the 4/22 commenter is a cattle rancher? I don't understand why more people don't try to cut back on meats. Why not spend 5 minutes reading about what the animal on your plate has gone through and then cook up that chicken, pig, or cow. Forget the amazing health benefits of a plant based diet, have some compassion for other living creatures.

I think this is great! People need to realize that we vegetarians don't just eat salads! There are fun, tasty meat-free foods out there just waiting to be had. :D
And I can't understand why omnivores have such a problem, we vegetarians deal with meat-lovers recipes and cooking shows 95% of the time, its time they do some meat-free versions for those of us not into dead flesh...

These croquettes look and sound delicious, but as a weight watcher, one serving of these croquettes is 1/3 of my daily points! At 405 calories, with 12 grams of fat, these are not the most healthy option. :(

Balance & responsible diet is good & that INCLUDES eating meat from humane farmers, but if you think soy is good for you, you are very very wrong, it poisoned my family. & soon the unexplained illness will start showing up to show how bad soy really is. If you are on soy & are having issues check out some things on the internet, my sis in law did that & it saved are health & my 4 kids health.

Problem with these veggie dishes is that the majority of them use beans. I hate beans.
