WOULD LOVE TO GO VEGETARIAN AT LEAST A COUPLE DAYS A WEEK, BUT HAVE VERY PICKY MEAT AND POTATO EATERS AT HOME!

I am eating it right now, delicious! Though I made a number of changes, I left out the onion because I don't like them and I forgot the zucchini, and I didn't use ground coriander as I was using fresh cilantro, and no lemon juice. I added 2 Fieldbrook vegan smoked apple sage sausages, some chili powder, and 1 teaspoon of sugar to cut the acidity just a bit. I served it over couscous. I will definitely make this recipe again, and I will not forget zucchini next time.
