Have made this many times exactly as written, always with a trimmed butt roast. Very flavorful. Big hit at potlucks. All of the spices and sauces come together to make a very full flavored dish. The chipotle chile in adobo sauce really makes a difference; it adds a smokiness to it. Not at all spicy if you're concerned about the heat. I like to serve it on a good crusty roll or bread like a torta roll or baguette. Suggest La Brea Bakery breads for those of you in So. Calif.

I will try this recipe today in my good ol' crockpot! I like the idea that this version doesn't include BBQ sauce and like the caramelized onions...

I made this yesterday. It was delicious!! I made sandwiches on Kaiser rolls. I had quite a bit left over and will be making the Pulled Pork Torta recipe that followed this one.
