This is one of my favorite pasta recipes. I have used 1% milk and it still tastes great. I'm thinking of experimenting with soy milk because it naturally has a creamy texture. This recipe is definitely a keeper!

I recently picked up the vegetable pasta and was thinking of mixing that with some white pasta to finish the box. Although I love wheat bread white pasta just tastes better if you cook al dente. I always mixed eggplant being of American Italian and grew up on the food.
Thanks for the tips. I always enjoy mixing my quick dinners being single. Don't like restaurant foods, too of everything. If you notice SUBWAY veggie sandwich is low in calories and extremely satisfying on wheat bread. Good lunch.

Woah baby! The little zucchini strips really made this dish special...so creamy...leftovers are awesome as well. Would fool alfredo - lovers.

Made this last night and really enjoyed it. I did add 50gram of lean finely chopped ham (add 70cal), but did not use full fat milk - I used the 98%fat free milk instead. I had also run out of grain mustard so substituted Dijon which still tasted nice. Not sure how much cal difference in Dijon but I think this still came in under my cal allowance. Will make this one again... maybe with lean poached chicken would be nice too.
