I modified this recipe the following ways. I used panko whole wheat bread crumbs instead of flour. I mixed it with the cornmeal (I used a bit more than the recipe called for to get a good coating). With a little care it was easy to keep the coating on the chicken. Secondly, I baked the chicken in a 425 oven for about 12-15 min per side. The results were excellent. The chicken was crispy and well coated. DME
