The Pies look great..but you lose me at "substitute some of the butter with canola oil". Besides the allergy factor to canola I would never use canola due to it being an inflammatory oil. I really like the butter better and if need be cut with water and perhaps extra moisture from a slight amount of coconut oil(which is healthy). Olive oil would be ok in vegetable or chicken pot pie. Butter is a pure ingredient . Canola, a man made oil from the rapeseed plant does have a lot of ramifications for many, constipation and gi disturbances.(pain etc) Other than this , the pies look great!
