So discouraged by the reference to parmesan cheese since I'm looking at vegan options due to an allergy to milk and cheese is one of the hardest things for me to give up. Hoping for suggestions on substitutes for parmesan cheese on stir fry, not a reminder that parmesan cheese *makes* the stir fry. :-(

I am grateful to you for sharing your vegan recipes with us. I have a comment to make about the website. It would be helpful to give us all of the recipes on one page so we could choose which one works with our ingredients on hand. Scrolling through is time consuming and might lose folks looking for a "quickie recipe".
Vegan cooking is not difficult. I suggest you work with some sauces that include garlic, citrus, and nutritional yeast and/or nuts for added flavor. Keep salt out of it as much as possible. You can use coconut milk for creaminess. I use herbal seasonings that have no salt to help the vegies taste more interesting. If I've grown my own, that's great! Friends bring things that I can blend easily when dried that will last awhile as a saltless blend. Just about anything works.
We can have gourmet food every day, Just a touch of love creates magic. Simplicity is the best way to go for benefits of health and budget. Maybe publish the food combining rules and very simple recipes for health and budget as a part of your magazine.
I don't eat or promote meat eating as a lifestyle now. I really hope your magazine will go more toward not eating meat. We do have choices. Please present them more fully. Thank you.
