Cheap Healthy Lunch Ideas for Work

Oh, how sad most of the commenters seem to be. "Throw up"? Really? "Terrible?" "Busy professional -- these would take too long"? Honey, if you don't have some time in your week to prepare food, which, after oxygen and water is the most important thing there is, then there is just something tragically wrong with how you have chosen to structure your life and I am very sad for you.
One comment advised that I not make too many salads because that will cause gas and my co-workers won't like me. Hmmm... I pass more gas than you do, probably, and my co-workers like me just fine. When good people work with other good people, then it's all about the people, not the gas. These recipes have even made friends for me when I share the deliciousness.

Anyway, I for one am really looking forward to all of these. I have begun playing with this list by making one recipe a week and so far I've had a blast. The food has been good, it has been different than what I normally make, and the small preparation time has been calming and meditative. I prepare the recipe on Saturday or Sunday and then take the food to work for the next few days, as long as it lasts. When I run out, I take something out of the freezer for (Thursday and) Friday.

I think this is a great list! Quite a few ideas that I would have never thought of, I will now! :)
People spend more time complaining than putting a little thought into the list and figuring out how you can tweek these recipes to meet your individual needs! Although, most of the recipes will fit my needs as they are. I will prepare most of these for dinner the night before and take the leftovers for lunch the next day (so will hubby), this is how you get the recipes to $3 or less, in most if not all cases here. If you can't say something nice, don't say anything at all.

I think this is a great list for inspiration.
Personally, would not have thought to mix white beans and avocado, but I'm liking it in this (heavily revised) recipe: used sesame oil instead of canola, used a pre-shredded coleslaw mix (which included carrot so I used approx. 2 1/2 cups of the bagged slaw-mix), added lime juice to the bean & avocado mix since I was saving some for another day, skipped the cilantro because I don't like it and added tomato because I do...! I also opted for sesame slaw thinking it would be would be good in a salmon wrap—way to use up a ten-pack of wraps and a whole bag of slaw in a week while having "different" lunches.
If you use your own preferences & judgements (for time-saving/taste-bud reasons), this is a very helpful list.

For all of you bringing up the amount of time that it takes to prepare them, the article never claims to have SPEEDY recipes it merely says CHEAP and HEALTHY. About half of these recipes are meant to be eaten cold and are some sort of salad. If you don't like soups don't complain about them, just don't eat them.

for the one giving kudos on this article you must have had the whole bottle of wine with the mediterranean wrap. these recipes are horrible ideas for work, who the heck has so much time.
