almost any pancake recipe can make great waffles with two changes: add more fat, such as oil or melted butter (this is probably optional but they come off the waffle iron easier -- I use 4 Tbsp oil for every 2 c. flour for waffles) Second, separate the eggs: mix the egg yolks into the batter like usual but beat the egg whites until fluffy and fold them into the batter after everything else is mixed.

Any ideas on how to convert this recipe for waffles? I would really like a healthy, homemade waffle mix.

It amazes me how many so-called recipes and things you buy in the store, that tout they are "heart-healthy," but are loaded with sodium, sodium is the number one thing that causes high blood pressure.
