To help you gear up for a week of eating healthy, fresh foods, we’ve put together a seasonal spring dinner menu of quick, healthy recipes. On Sunday, there’s a lovely vegetarian quiche with a creamy filling speckled with jolts of pickled jalapeño and Jack cheese. I’m going to prepare Monday’s hearty Sausage, Cabbage & Root Vegetable Soup on Sunday, too, since I’m cooking anyway and it keeps well. (Those leftovers will be great for lunch later in the week.) Wednesday’s dinner is a fast pan-seared salmon with a punchy lime sauce (energizing) and Friday it’s Quick Fettuccine Alfredo (comforting). With something delicious to look forward to every night, the week will fly by.
