Staying within a grocery budget is a good exercise anytime of year. These five dinner recipes from the EatingWell Test Kitchen helpfully watch the budget for you: all cost less than $3 per serving. They also prove that a meal made with less-expensive ground beef or sensible chicken drumsticks is an option that doesn’t leave you feeling deprived. And when you play up pasta or potatoes at the center of a meal instead of meat, you naturally save money. I’ll spend less than $12 to make four generous Asparagus & Ham Stuffed Potatoes; with just six ingredients (not including salt and pepper), there’s not much to buy and just a little prep to do. That’s good, because the less time I spend at the store, the less I’ll be tempted to stray outside my renewed resolve to shop smart and eat (well) within my means.
