This streamlined version of a northern Italian idea is perfect for a summer evening: no-fuss, no-cook and big taste. You can even make it ahead and store it, covered, in the refrigerator for several days. If you do, use it as a wrap filling for the next day's lunch.
Toss leftover cooked chicken with barbecue sauce and crunchy carrots for a quick and healthy lunch.
An unusual and rich flavor combination; serve this salad with sliced tomato on a bed of lettuce or on French bread.
A Mexican-style torta is just like a burrito, except the “wrapper” is a hollowed-out roll instead of a tortilla. Here it's filled with mashed spiced black beans and a quick guacamole. Take this vegetarian version to another level (and add calcium) by melting Monterey Jack cheese onto the bean side of the sandwich. Serve with: Grilled corn on the cob or Spanish rice.
Watercress acts as a tasty divider between the salmon salad and crackers. Multicolored peppers and grapes add color to this bento and boost your daily servings of fruits and veggies.
This egg salad bento box is a hearty lunch and snack all in one. Spoon the egg salad into a lettuce “bowl” to keep it looking pretty and enjoy with cocktail bread and veggies. Toss banana and blueberries with yogurt to keep the bananas from turning brown. Save the chocolate chips and pistachios for an afternoon pick-me-up.

I have been trying to eat healthier and lunch is one of my toughest meals to eat healthy. In addition, when I eat an unhealthy lunch, I feel like I drag in the afternoon. I know a tuna sandwich is a good lunch but I get tired of eating tuna over and over again. I appreciate all the different recipes in this article. Thank you.

It seems to me that you are not going to lose weight eating all this "fancy" food. I keep my lunch choices simple, and I do fine and lose a ton of weight.

A tablespoon of barbecue sauce is not unhealthy. The only thing here that is time consuming would be the bento box. And a food's "fanciness" has nothing to do with it's caloric content or nutritional stats.
Thanks for the excellent recipes.
