We like the sweet taste and extra-saucy consistency of canned diced San Marzano tomatoes in sauces like this one. Marjoram pairs well with the seafood, but basil or even parsley works too. Serve with a Caesar salad.

Grilled Halibut Salad Niçoise

Salad nicoise, a classic French salad, is typically made with tuna. Here we use sweet grilled halibut (in season in midsummer) or striped bass. To make it quicker, substitute 2 or 3 cans of drained chunk light tuna. Or skip the fish altogether for a vegetarian main-course salad. The details of this feast vary depending on what is freshest and most affordable and which Biblical story is referenced—from three types of fish for the three wise men to the most common number, seven, for the seven days of creation, to 13, in reference to Jesus and his apostles.
