Great use for zucchini

I absolutely enjoyed this recipe. I followed the recipe for the latkes and I loved the taste and flavors. I did use dreied dill, which was all I had on hand. I didn't make the Tzatziki, because I always have Hannah"s Tzatziki in my frig. I used the hannah's. made all twelve patties at once, however I cooked them over several days. They turned out great each day.

Good taste, Not filling

We enjoyed these for dinner, but they do not make a meal. Even with the addition of balsamic topped tomatoes, I found I was still hungry after eating.
Next time I would add more cheese, possibly some oregano for added flavor (they were a tad bland), and definitely some rice on the side. Tzatziki was indeed a nice touch.

Good lunch or snack

Made these for lunch today. The latke by itself is okay, not the best tasting but with the tsatziki it tastes delicious. My boyfriend ate a few of them and love them. Pretty good. Does take a little prep time.

These turned out really well and were a hit with some picky eaters! Also a great way to use up our farm fresh zucchini. I actually used shredded raw potato and the latkes turned out fine. I did salt the shredded zucchini and the shredded potato, let them sit for 15 minutes, and squeezed out a lot of liquid before I formed them into patties and fried them. I'll definitely be making this recipe again, though it did take me longer than 40 minutes.
