Here’s a super-simple zucchini bread recipe. The addition of chocolate chips makes it more like a dessert than a breakfast, but you can enjoy it anytime. Skip the chocolate and try it with toasted walnuts or raisins if you prefer. Freeze 2-cup portions of shredded zucchini so you can make zucchini bread all year long.

This bread is only decent. I will eat it but I wish I had used a different recipe for my zucchini. I am sure there are other healthy options out there that are more moist. I need it to be a little sweeter. Overall ok; was hoping for better.





I made this recipe but made 12 muffins instead of a loaf (better portion control). Baked for about 18 minutes I think. Also just used regular whole wheat flour since I had it on hand- tastes great- not sure if there would be much difference with the white whole wheat.





Mine came out flat and a bit gummy but it was my fault for trying to make 3 loaves at once! I made 2 loaves with raisins and 1 batch of muffins with chocolate chips, those were my fave :)
