Couscous, which is actually a type of tiny pasta, makes an almost-instant side dish. Happily, the whole-wheat variety is just as fast to prepare as regular couscous. Lemon zest is a delicious accent to nutty Parmesan in this Italian-inspired couscous.

This was a really nice change up from just regular couscous, plus it was healthy and filling.





This dish is incredible!! I've made it twice already! I used Stelline pasta (tiny star shaped pastas) instead of couscous. It turned out perfect. Even my husband who is not very keen on healthy dishes loved it! Tonight I am making this same dish except I'm doing it stuffed pepper style! Yum, can't wait!!!





This recipe is delicious -- it took very little effort to make and was done in less than 10 minutes. I bought a huge jar of whole-wheat couscous and I have been finding all kinds of easy recipes to make with it -- it cooks fast, and it's good for you! I also found sodium-free chicken boullion which I mix with hot water and use in place of canned chicken broth, so it adds delicious flavor but no sodium to this recipe.





Absolutely WONDERFUL! Having only discovered couscous in the last year or so, I am a BIG fan of this unique ingredient. And pairing it with lemon? GREAT! Served this recipe tonight with a dry-aged t-bone steak, using the tri-color couscous, and the pairing worked very well. I'll be looking for more couscous recipes to try!
