I made this because it was a meatless meal for lent; I knew my husband would like it. I was surprised to find out that my 15 year old son LOVED it! My 12 year old son did not rave about it, but he did eat it. We all thought it was a keeper.

When I first made this I didn't think it looked like anything special. Well, I was wrong. It is delicious. Instead of thick pieces of toast, I used thin multi grain buns, split open and broiled them in the broiler with the cheese just for a few minutes.Then topped them with this awesome tomato bean mixture. These are really worth trying. They reheat the next day just great. Love em.

This is a great easy, healthy and tasty recipe. I eat vegetarian so this was perfect. My family loved it and it was even better the next day

This is so easy and really delicious. I used a little less garlic and added white wine for a little more flavor. Since we had leftover rice, my husband chose to eat his on rice instead of toast. He loved it!
