Eating in the Safe Zone: Bonus Tips

Food-safety tips to use every day



Clean, Separate, Cook and Chill
  • Clean. Wash hands and cooking surfaces before and after handling raw meat, poultry and fish.
  • Separate. Separate raw, cooked, and ready-to-eat foods while shopping, preparing, or storing foods.
  • Cook. Proper cooking makes most uncooked foods safe.
  • Chill. Follow the 2:2:4 rule. Refrigerate or freeze leftovers within two hours of cooking the food. Otherwise throw it away - it may not be safe to eat. Store leftovers in the refrigerator in shallow containers -about 2 inches-and use them (or freeze them) within 4 days.
Use Caution When Eating
  • Pink hamburgers or ground beef
  • Raw fresh fish
  • Raw oysters
  • Raw /unpasteurized milk
  • Raw or runny eggs
  • Alfalfa sprouts
