Easy, delicious, add rooster sauce for some spice.
Vietnamese-Style Beef & Noodle Broth
Inspired by pho--traditional Vietnamese soup--this one-pot meal is garnished with crunchy mung bean sprouts and chopped fresh basil. You could also serve it with lime wedges and a bottle of Asian chile sauce, such as sriracha, on the side.

I made this for my husband's birthday. We wanted something light and healthy, but different from our normal fare. The only thing that would have made this better would be the addition of more light soy sauce and some red chili flakes. SOO good!
This was so quick and easy to make, but I didn't realize I was going to have to add flavor to it. It was fine alone, but blah
My children love Vietnamese food, however I found this a little bland and had to add more spice and soy sauce. Still I will try it again, but with chicken rather than beef.
Another family favourite is Thai Chicken Green Curry, which is really simple to do and a great healthy meal for during the week as it doesn't take long, here is link to the recipe we use
Whomever said Pho is bland either has never been to an authentic Vietnamese restaurant -- as if a Vietnamese person went to McDonalds and used that to judge what a hamburger should taste like. Clearly, you don't get it. The commentor who added star anise, etc is atleast barking up the right tree.
