Loved it!!

I used peppers instead of tomato and I added crushed red pepper on top. Turned out perfect! If you are a single lady just cut the recipe into 1/3 and you have dinner and lunch the next day!

Great beginner recipe

The first time I made this I had a problem with the cheese sauce and all of my cheese ended up in a big lump. After that first time I did things a little differently.

I cook the sausage in a large pan with a lid. Once the sausage is cooked I add the garlic, arugula (I've also used spinach) and grape or cherry tomatoes that are cut in half or quarters, depending on how big they are. I stir it up, cover it and leave it for awhile. I keep checking and stirring it until the tomatoes are broken down well. Usually, because I've had a lid on the pan, I have a good amount of liquid. I add some olive oil to everything in the pan and mix it up. I usually don't need the extra cooking water. I then drain my pasta and dump the contents of the pan into it and mix it all up. I only add cheese at the end and only to the portion I'm eating. I find it works out best for me this way, no clumping cheese. I cook only for myself so this leaves me plenty of leftovers to bring to work for lunch and additional dinners. I use an entire 1 pound box of pasta and either turkey or chicken sausage that I get from a farmers market or Whole Foods. I try to get it as close to a pound as possible but sometimes I end up with a little more so I use it all.

I loved this - so easy to make and quick, too. I used zucchini instead of tomatoes and I added a dash of lemon juice to the sauce and I sprinkled in some crushed red pepper flakes. Delicious! Only problem was the clumpy cheese, which I wouldn't have had if I'd read the reviews first! :)

Used Tofu Sausage instead of turkey

I substituted Tofu Sausage links instead of turkey and it was a great way to turn this into a vegetarian meal. As a meal for 2 people, it left plenty of leftovers for the week. Will make again.

Great Recipe

I love this recipe! I used asiago cheese instead of parmesan and I added red onion and zucchini for more veggies. This is definitely a new weekday night go-to for me.
