Tortilla Soup

Here's a version of chicken tortilla soup that's both super-easy and delicious. To make it even quicker, use crumbled baked tortilla chips in place of the homemade tortilla strips and skip Steps 1-2. Serve with vinegary coleslaw, lime wedges and hot sauce.

"I add black beans at the end of the cooking process. When serving I put a dollop of sour cream then the tortilla chips. Chop cilantro and squeeze some lime juice on top. Fantastic! "

This is a very good low fat version of Tortilla soup. I doubled the recipe, used 2lbs boneless/skinless chicken thighs and added a can of white beans. When serving I added a small amount of chopped fresh avocado. This was a big hit with my son and husband. Thanks!

Excellent flavor combination and very easy to make. Just be sure to wear gloves when you cut up the hot pepper!

My girlfriends and I use to make this exact receipe a long time ago. I had lost it the original and coundn't remember all the ingredients. I am so glad to find it here. After eating this, you won't ever have it at a restaurant again! Thanks.

Very, Very good. I used some pre-cooked cuban-spiced chicken thighs from the deli (and omitted the cumin) and added frozen corn. I want to eat this every day! Next time I'm going to reduce the meat to half a pound and add some beans (they're good for your heart).

Wow, I just made this for lunch and it was GREAT! I used boneless chicken breast in place of the chicken thighs as I am not a fan of chicken thighs. But, my husband LOVED it. I went to the extra effort to make the tortill strips and it made a difference! This is a new staple at our house!
