Tortellini & Zucchini Soup

Everyone knows tortellini make a quick weeknight pasta dinner—but they also add substance that turns this quick, colorful vegetable soup into a meal. One caveat: Read the label carefully; avoid pasta products made with hydrogenated oils or unnecessary preservatives. Enjoy this soup with a slice of multigrain baguette and a spinach salad.

Quick and easy meal. I would like to add that make sure you season your vegetables well (a little salt and pepper) when sauteeing them. I did not do this and felt that the soup could have used a little bit of seasoning. Other than that the soup was great! I added about an extra cup of water so that there would actually be some 'soup' left in the left overs (tortellini will continue to absorb liquids even after cooking).

I love this recipe!! I usually double up the veggies and serve with rosemary bread on the side. Delicious!

This is one of those dishes that is perfect for a weeknight since it is so easy to prepare. Everyone loved it and we will definately be fixing this again.

I am recent widow and have found I love soups, so these soups are wonderful for 2 or even 3 extra nights...nutritious, delicious and EASY!

I made this for dinner last night since I had all the ingredients on hand with the exception of the tomatoes. I used a can of diced Italian style tomatoes and added the tomatoes with their juices to the soup. It worked just fine. I used a bit more broth than recommended since I assumed that the leftover tortellini would absorb some of the broth. The soup is delicious. Alas, my vegetable averse child picked his way around the veggies (unlike the child of another reviewer.)
